7 oz. Red Fire chocolate
1 stick unsalted butter, melted
3 tbs. unsweetened cocoa powder
3 eggs
1 c. sugar
2 vanilla beans (thinly diced)
1 tsp. guajillo chile powder
1 tsp. salt
1 c. flour
3 oz. Red Fire chocolate
1/3 c. cocoa nibs
1. Pre-heat oven to 350F. Spray 8" sq. brownie pan and line w/ two sheets of foil (hanging over the edge).
2. Melt 7 oz. Red Fire chocolate and butter in a medium sized bowl and set over simmering water. Stir occasionally until melted, and whisk in cocoa powder until smooth. Set aside.
3. Combine eggs, sugar, salt, diced vanilla beans and guajillo chile in a bowl. Mix to blend.
4. Pour melted choclate mixture over sugar mixture. Mix just to combine.
5. Add flour and stir.
6. Add chunks and nibs and fold into batter.
7. Pour into brownie pan and bake for 30 minutes.
1/3 of a recipe ("3" servings) makes two 2x5 bread pans. Bake for 20 minutes and check for doneness.
